Looking for a fast delicious dinner idea? Well the search is over, it’s Cowboy Goulash. When I was younger my mother used to make this it was always one of my favorites. It has remained one of my favorite comfort foods since childhood. In college I made it for friends and sorority sisters before a big cram session for midterms and finals. It’s always a big hit, and it’s sure to be with your family.
Recipe
What
you’ll need:
1 lb. ground
round
1 cup
bell pepper (diced)
1 cup onion
(diced)
3 cloves garlic (minced)
1 can petite
diced tomatoes
1 can of
Rotel (you can substitute the petite diced tomatoes with 2 cans of Rotel if you
like things spicy)
1 can Whole
Kernel Corn (drained and rinsed)
1 bag of
broad egg noodles
Salt and Pepper to taste
Salt and Pepper to taste
Putting it
all together:
Prepare
noodles according to package directions in a large pot or Dutch
oven.
Cook onions,
peppers, and garlic in a large skillet over medium high heat until onions are
transparent and tender.
Add in
ground round or beef to skillet and cook until browned.
Drain
noodles and return to large pot.
Add
browned beef and vegetables to noodles
Add in
cans of tomatoes, and corn to beef and veggies.
Simmer on
low for 20-25 minutes to allow flavors to mix together.

My father was a captain at the fire department and they'd rotate to each member of the team to cook supper for those firefighters that had to stay at the station overnight. Their fare was often something simple, dad liked to cook goulash and he often made it for us as kids at home too - MAN I loved it! do you add any seasonings? salt, pepper, chili powder or anything? I have all the ingredients and just noticed no seasonings are mentioned.
ReplyDeleteAside from the garlic no, but if you'd like Red Pepper or Chili Powder would give it a little kick. Also you could add salt and pepper to your individual preference. I try to limit our salt in take because high cholerestorl and heart disease run though both sides of our family tree. --
